Honey and Vanilla Cheesecake 

Honey vanilla cheesecake 

250g Cream cheese 

250 ml Double cream 

2 T honey 

4 T icing sugar (add more if you like it sweeter) 

Unsalted butter 

4 tsp vanilla essence 

Oat or ginger biscuits 

Raspberries to serve

To make base: 

Put biscuits in a grinder or resealable plastic bag and crush them with a rolling pin until they become fine crumbs 
Pour melted butter into the crumbs and mix until well combined  
To make the filling :

mix the cream cheese, double cream, honey, icing sugar and vanilla essence in a bowl until smooth.
Divide the biscuit mixture evenly between serving dishes then evenly spoon filling mixture on top of the base and top with fruits.
