Butternut and Sweet Potato Soup 


Orange flesh Sweet potato diced
Butternut Squash diced 

Potato diced 

500ml Vegetable stock 

Grated ginger


In a pot, fry onion and ginger. Once onion becomes translucent add the butternut, sweet potato and potato to the pot, cover with the vegetable stock and leave it to cook until the vegetables are soft. 

Once soft, blend the vegetable and keep adding stock until the soup is your desired consistency
