Bacon and chorizo Shakshuka 


* 1 T olive oil 

* 1 onion, finely chopped 

* 1 green pepper, finely chopped 

* 150 g chorizo, sliced 

* 2 cloves garlic, finely chopped 

* 1 t chilli flakes 

* 2 t smoked paprika 

* 2 T tomato paste 

* 1 can chopped tomatoes 

* 1 t sugar

* Bacon bits (or sliced streaky bacon)

* Salt & Pepper to taste 

* 3 eggs 

1. fry the onion and green pepper in a little olive oil until soft. Add the chorizo, bacon bits, garlic, chilli flakes and smoked paprika for a further 3-5 minutes 
2. Add the tomato paste, canned tomatoes and sugar. Cook over a medium heat for 10 -20 minutes , or until thick
3. Gently crack eggs into skillet over tomatoes. Season with salt and pepper.Cover and simmer for approximately 10 minutes or until the whites of the eggs are no longer translucent.
